1 large onion finely chopped
1 cup chopped fresh mushrooms
1 medium zucchini chopped (1 cup)
1/2 teaspoon dried oregano crushed
1/2 teaspoon dried basil crushed
2 tablespoons butter or margarine
1 1/2 cups cooked rice
5 beaten eggs
1/3 cup milk
1/3 cup grated Parmesan Cheese

Directions:
Directions:
In saucepan cook onion mushrooms zucchini basil and oregano in butter or margarine till vegetables are tender but not brown. Stir in rice, eggs, milk, and 2 tablespoons of the cheese. Turn into well greased 9-inch pie plate. Sprinkle with the remaining Parmesan cheese. Bake, uncovered, in 350 oven 25-30 minutes or till set. Let stand 10 minutes. Garnish with a halved cherry tomato and parsley, if desired. Serve 6
