3 lg Bell Peppers
1 lb Ground Beef
1/2 Onion chopped
1 can Dice Stewed Tomatoes with Italian seasoning
3/4 c Raw White Rice
3/4 c Water
2 c Cheddar Cheese shredded
Salt, Pepper
Onion & Garlic Powder

Preheat oven 350
To prepare bell peppers:Bring large pot of salted water to a boil. Cut bell peppers in half length wise. Remove seeds, rinse. Place in water and boil for 5-6 minutes. Remove and place in 9 x 13 baking dish.

Stuffing: Brown meat and drain, add chopped onions and continue cooking until onions are tender. Season to taste with salt, pepper, onion & garlic powder. (Note: If tomatoes are not seasoned with Italian seasoning, add 1/4-1/2 tsp of dried Italian seasoning) Add tomatoes, rice, and water. Cook until rice is tender and water has been absorbed. Remove from heat stir in cheese. Place stuffing in bell peppers. Bake about 30-45 minutes.
