1 lg Onion
3/4 c Celery
1/4 c Butter
5 c peeled and cubed Potatoes
3 c Water
3 c Milk
4 tsp Chicken Bouillon granulated
1/2 tsp Salt
1/4 tsp Pepper
1/4 c All purpose Flour
4 c shredded Cheddar Cheese
1/2 lb. cooked crumbled Bacon

Directions:
Directions:
Sauté onions and celery in butter for 5 minutes. Add potatoes and water. Bring to a boil the reduce heat, cover and simmer for 15 minutes or until potatoes are fork tender. Stir in 2 cups milk, granulated chicken bouillon, salt and pepper. In a separate bowl, combine flour and remaining milk until smooth, gradually add to soup. Bring to a boil, cook for 2 minutes or until thicken. Add cheese and bacon. Stir until cheese has melted. Serve immediately.

This is the soup that my dear friend Ben Free and I use to make when we were students at Florida State. It was a favorite study food on those rainy winter days in Tallytown. Good times, good friend, good memories.
