1 1/2 c. creamy or chunky peanut butter
1 c. packed light brown sugar
1 c. granulated white sugar
8 T. (1 stick) unsalted butter, softened
3 large eggs
1 T. vanilla extract
4 1/2 c. quick cooking oats
2 tsp. baking soda
1 c. semisweet chocolate chips
1 c. M&M plain chocolates

Preheat oven to 350. Spray cookie sheets with non stick spray or line with parchment paper. In large bowl combine peanut butter with the sugars and butter. Use an electric mixer to mix until well combined. Mix in the eggs and vanilla. Mix in the oats and baking soda. Stir in the chips and M&M's. Drop cookies by heaping spoonfuls on prepared sheets. Bake 10-12 minutes. DO NOT OVERBAKE! Cool for 5 minutes or until cookies are set on cookie sheet. Finish cooling on rack. Can dot with extra M&M's to look pretty before baking.
