1 c. butter, softened
3/4 c. sugar
2 c. flour
3 c. flaked coconut, divided
15 drops red food coloring
10 drops green food coloring

Directions:
Directions:
In large bowl cream butter and sugar until light and fluffy. Gradually beat in flour. Stir in 1 cup coconut. Divide dough in half and shape each into 7" long rolls. Place 1 cup coconut into each of two large resealable plastic bags. Add red coloring to one bag. Seal bag and shake to tint coconut. Repeat with remaining coconut and green coloring. Roll one log in red coconut and the other in green coconut. Wrap logs separately in plastic wrap and refrigerate 1-2 hours until firm. Cut logs crosswise into 1/4" slices. Place 1" apart on ungreased baking sheet. Bake at 325º for 12-14 minutes or until bottoms are light brown. Let set 1 minute and remove to rack to cool. Can be frozen for 3 months and baked as directed, baking 1-2 minutes longer.
