Ingredients: 2 eggs slightly beaten 30 ml (2 tbsp.) cold water 250 ml (1 c) fine dry bread crumbs 1 ml (1/4 tsp) seasoned salt 0.5 ml (1/8 tsp) pepper 1 ml (1/4 tsp) oregano 6 slices cooked turkey breast 3-6 mm (1/8-1/4") thick 45-50 ml (3-4 tbsp.) vegetable oil 1-398 ml (1-14 fl oz) can of Hunts Spaghetti sauce 250 g(1/2 lb) mozzarella cheese sliced 125 ml (1/2 c) green pepper cut into julienne strips 125 ml (1/2 c) mushrooms finely chopped

Directions:To Prepare Mix together egg and water and pour into a shallow dish. Combine bread crumbs, salt, pepper and oregano in a shallow dish.
Conventional Oven Directions Preheat oven to 180ºC (350ºF). Dip turkey slices in beaten egg mixture and then in seasoned crumbs. Heat oil in skillet and brown breaded turkey slices on both sides until lightly crisp. Transfer to a baking dish (22X34 cm/9X13"). Cover turkey slices with spaghetti sauce and top each piece with mozzarella cheese and sprinkle with chopped green pepper and mushrooms. Bake uncovered until sauce bubbles and cheese melts (about 20 min).
Microwave Oven Directions Decrease vegetable oil to 15 ml (1 tbsp.) Hunts spaghetti sauce to 250 ml (1 c) Mozzarella cheese to 115 g (4 oz) Dip turkey pieces first in egg mixture then in seasoned bread crumbs. If time permits chill breaded turkey for 1 hour. Preheat browning skillet according to manufacturers instructions on high for 6 min. Spray lightly with non-stick vegetable coating. Brown 3 turkey slices at a time for 1 1/2 min per side. Transfer to a shallow baking dish (22X34 cm/9X13"). Preheat browner for 3 min before cooking remaining turkey. Cook green pepper in oil for 1 min and stir in mushrooms and cook 1 min longer. Spread turkey slices with spaghetti sauce and distribute green peppers and mushrooms evenly over top. Cook uncovered at 50 or 60% power for 6 min and top with cheese and cook 1 min longer, also at 50-60% power. Let stand 2 to 3 min. |
