Pumpkin Roll Recipe

3 eggs
1 cup sugar
2/3 cup pumpkin
3 tsp pumpkin spice
1 cup flour
1 tbsp. lemon juice
1 cup walnuts, optional

4 tbsp. butter, softened
1 cup powdered sugar
8 oz cream cheese, softened
1/2 tsp vanilla

Beat eggs 5 minutes.
Slowly mix in pumpkin, pumpkin spice, lemon juice, flour, and sugar. Beat until well mixed.
Layer cookie sheet with wax paper; pour batter in and smooth out. Sprinkle walnuts on top.
Bake at 350F for 15 minutes. Remove from oven, place towel on counter. Flip cookie sheet over to empty the cake onto the towel. Pull off the wax paper. Roll the cake up into the towel.

Beat all filling ingredients together until well mixed. Once cake has cooled, unroll. Spread filling onto cake. Roll cake back up. Cover until ready to eat.
