Salad for two:
Spinach, washed, stemmed and dried
2 green onions, chopped
2 fresh mushrooms, cleaned and sliced
1 boiled egg, grated
4 slices bacon, cut into 1 inch pieces and fried

bacon grease
1/4 cup cider vinegar
1/4 cup water
1 teaspoon sugar
salt and pepper to taste

Divide spinach between two bowls.
Top each bowl with half green onion, mushrooms and egg.

For dressing, cool grease and add vinegar, water, sugar, salt and pepper.
Bring to a boil and pour over salad just before serving.
Top with bacon and enjoy.
