11/2 lbs ground chuck
1 med onion
1 tbsp olive oil
2 cans 15oz pinto beans - rinsed and drained
2 cans 14 oz diced tomatoes with green chilies - undrained
2 c water
1 15oz can black beans
1 can 14 oz cream style corn
1 envelope ranch salad dressing mix
1 envelope taco seasoning
1 tbsp dried cilantro

Directions:
Directions:
In large kettle crown beef and onion in oil. Add the remaining ingredients and bring to a boil. Reduce heat and simmer for about 30 minutes. Sprinkle with cilantro.

The original recipe called for boneless beef sirloin or round steak, but we didn't care for that. We tried using ground chuck and prefer it instead.

This is real good with tortilla chips or fritos. On a cold winter day, fix a grilled cheese with a hot bowl of this soup and you have a winner!!
