1/3 cup (5 1/3 tablespoons) butter
1/3 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups OATS uncooked Quaker (quick or old fashioned)
3/4 cup all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1-1/3 cup shredded carrots
1/4 cup chopped nuts

Directions:

Heat oven to 375°F. Oil one 8-inch square baking pan. Combine butter, brown sugar, eggs and vanilla; mix well. Add oats, flour, cinnamon, baking powder and baking soda; mix well. Stir in carrots and nuts. Spread into prepared pan; bake 25 minutes.
