2 slices prosciutto or 2 slices salt pork
1 sm onion
3 TBS. butter
3 TBS. chopped parsley
1 Cup rice, long or short grain but not quick cooking
3T. olive oil
1 10 oz pkg. frozen pea or 1 lb. fresh peas
1 Qt. chicken broth
Grated Parmesan cheese

Cut prosciutto in tiny squares, mince onion, chop parley
Put oil and butter in a big heavy pot over medium heat and add all the chopped ingredients. Saute the onion until limp and enough broth to cover(about 1/2 ounce) and cook 5 minutes. Add the rice and broth and bring to a boil. Reduce the heat and simmer for 15,stirring often or until rice is tender. If soup is too thick add a little broth. Serve very hot with a sprinkle of cheese on top.
