6 cups thinly sliced cucumbers
2 cups thinly sliced onion
1 1/2 cups vinegar (I've used white and a combination of white & apple-cider) experiment to fit your taste.
3/4 cup sugar (I use stevia)
3/4 tsp salt
1/2 tsp mustard seeds
1/2 tsp celery seed
1/2 tsp ground turmeric
1/2 tsp crushed red pepper
1/4 tsp fresh ground pepper
6-8 garlic cloves sliced

Directions:
Directions:
Use a medium glass bowl or large glass canning jars(with the jars you will need about 1/2 again as much brine) and layer the slice cucumbers and onions.
Combine the vinegar and remaining ingredients in a saucepan, stir will. Bring to boil and cook for 1 minute. Pour over cucumber mixture, let cool. Cover and chill at least 4 days.
