Chicken Pot Pie Recipe

1 c chopped onion
1 c chopped celery
1 c chopped carrot
1/3 c butter
1/2 c all-purpose flour
2 c chicken broth
1 cup evaporated milk
2 cups chicken, cooked, chopped
1 cup frozen peas, thawed
1 tsp salt
1/2 tsp pepper
2 cans refrigerated biscuits

Saute onion, celery and carrot in butter over medium heat until tender. Add flour; stir until smooth. Cook 1 minute, stirring constantly. Add chicken broth and evap. milk; cook, stirring constantly until thickened and bubbly.
Stir in cooked chicken, peas, salt and pepper. Pour into baking dish and top with biscuits. Bake according to biscuit instructions.
