1 sm onion, diced
1 clove garlic, minced
4 tbsp butter
1 c rice
2 cup vegetable (or chicken) broth
1 medium zucchini, shredded (cheese grater or salad shooter works great)
1 c shredded cheddar cheese
1/3 c grated parmesan cheese
1/2 tsp salt

Directions:
Directions:
Over medium heat, saute onions and minced garlic in 2 tbsp of butter until onions are translucent ( about 2 min)
Add rice, stirring continuously until slightly toasted. Pour in chicken broth and bring to a boil. Cover, and turn down heat to low. Simmer 15-20 min until liquid is absorbed. Stir in shredded zucchini, cheeses, 2 tbsp butter and salt. Stir until well cheeses melt.
