5 slices thick lean bacon
2 medium yellow onions, peeled and sliced
3 qts. sauerkraut in glass jars or fresh, drained & lightly rinsed
1 Tbsp. brown sugar
1 c. dry white wine
1 bay leaf
2 tsp. caraway seeds
pepper to taste
1 c. grated peeled potatoes

Place all of the ingredients in a heavy kettle and cover; simmer gently 2 hours.
