1 large package of spinach, stems cut off
1 jar of pickled beets
1/2 cup chopped candied pecans
1 large onion
1 package goat cheese
raspberry vinaigrette dressing

NOTE: I have used Durkee's french fried onions when in a hurry, but not quite as good!

Directions:
Directions:
Prepare this salad in individual servings for best results and for presentation (6 - 8 servings)
Take onion, cut into slices and caramelize in butter, drain on paper towel and set aside.

1. Split spinach into salad dishes

2. Slice beets and lay 4 - 5 slices on each salad

3. Crumble goat cheese and candied pecans

4. Drizzle with raspberry vinaigrette

Hands down best salad I've ever had. Takes a little time, but worth it if you are preparing a special dinner. My friend Mary Stanczak gave me this, who is an amazing cook. She served this to the Amway families on their planes, as their personal flight attendant, and passed it along to me. It's amazing, if you take the time and buy the right ingredients.
