Mix in saucepan:
3/4 c. sugar
2 envelopes unflavored gelatin
1/4 t. salt

Stir in:
2 beaten egg yolks
1- 6oz. evaporated milk
Cook and stir over low heat till gelatin dissolves. Remove from heat.

1 t. grated lemon peel

Stir in:
3 c. cottage cheese, blend in blender until smooth
1 T. lemon juice
1 1/2 t. vanilla
1/2 t. rum flavoring
Chill until mixture mounds when spooned. Stir occasionally.

2 egg whites until soft peaks form; gradually add
1/2 c. sugar, beating to stiff peaks
Fold into gelatin mixture. Then fold in
2 c. cool whip.
Pour into crust. Sprinkle with reserved crumbs. Chill until firm. 3 hours

Crumb crust:
1 1/2 c. graham cracker crumbs
1/2 c. chopped nuts, optional
1/3 c. sugar
1 t. cinnamon
1/4 t. nutmeg
1/3 c. melted butter
Mix and reserve 3/4 c.
Press mixture in a jelly roll pan or 8"-9" spring form pan
