Mom's Lasagne Recipe

1 - 16 oz. container of cottage cheese or ricotta if you prefer
1 egg slightly beaten
1 cup grated parmesan cheese
16 oz. lasange noodles cooked
2 packages 12 oz. of mozzarella cheese slices

To Make Meat Sauce:
1 lb ground beef (fried with one chopped onion)
3 cloves garlic (I use minced garlic in a jar)
1/2 cup chopped parsley
2 cans (28 oz. each) tomatoes
1 (6 oz.can) tomato paste
1/2 cup sugar
2 tsp. dried basil leaves
1 1/2 tsp. salt
1 tsp. dried oregano leaves
1/4 tsp. pepper

1. Cook lasagne noodles (set aside)

2, In bowl, stir together, cottage cheese, egg, 3/4 cup of the parmesan cheese (set aside)

3. In blender, take the cans of tomatoes and blend with the tomato paste (blend 20 - 30 seconds). Set aside

4. Prepare meat mixture, fry ground beef, with one cup chopped onions. Drain fat. Add garlic, and chopped parsley, stirring into meat mixture. Add tomato mixture, and all dry seasonings. Heat to boil, reduce heat and simmer 45 minutes.

5. In 9 x 13 pan, using cooking spray to coat, and take 1/4 cup of the meat mixture and spread in the bottom of the pan. Layer, first lasagne noodles, 1/3 of cheese mixture, and 1/3 of meat mixture. Repeat twice. top with remaining parmesan cheese.

6. Bake 350 degrees for 50 minutes. Let set for 10 - 15 minutes before serving.

One of the dishes I practically beat to death, as everyone likes it, and I made it so many times, I rarely screwed it up! Ha Ha
