1 cup soft butter
1 cup sugar
1/2 t. almond and vanilla extracts
2 eggs, separated
3/4 cup chopped blanched almonds
2 2/3 cups cake flour
1/2 t. salt
48 unblanched whole almonds

Directions:
Directions:
Cream butter and sugar until light. Beat in extracts and egg yolks. Add chopped nuts, flour and salt. Mix well. Roll into one inch balls. Dip into unbeaten egg whites (this provides the glaze). Put 2 inches apart on greased cookie sheet, Put a whole almond in center of each ball and push to flatten cookie. Bake in preheated oven at 350 degrees for about 10 minutes.
