Ingredients:  
1 1/2 lbs. Velvetta cheese
5 cups beef broth (if can broth is used, add 2 cans broth and 1 can water)
2 cups long grain wild rice
2 cups onions, chopped
1/2 cup oil
1 stick butter
3 jalapeños, chopped

Directions:
Directions:
Sauté rice and onions in oil. Add beef broth, peppers and butter. Bring to a rapid boil, reduce heat to simmer for 15 minutes with tight lid. Cut velvetta in small squares. Add when rice is done. Turn off stove. Stir several times to melt cheese.
