1 9-inch baked pastry shell
2/3 c. sugar
3 Tbsp. cornstarch
1/2 tsp. salt
3 c. milk
3 egg yolks, slightly beaten
1 c. plumped raisins
1 Tbsp. butter
1 1/2 tsp. vanilla
Pie meringue

Directions:

Plump raisins if dry (use orange juice, rum, or water). Mix sugar, cornstarch, and salt in saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Remove from heat; gradually stir at least half of the hot mixture into egg yolks. Then blend that egg mixture into hot mixture in saucepan. Boil 1 minute more, stirring constantly. Remove from heat. Blend in raisins (drained well if soaked), butter, and vanilla. Pour immediately into baked pie shell. Finish with pie meringue.
