3 T. Olive Oil
2 1/2 lbs. boneless chicken strips
1 T. minced garlic
2 1/2 cups chicken broth
1/4 cup fresh lime juice
1 T. ground cumin
1 T. chili powder
1 T. garlic powder
1 t. salt
1/2 t. pepper
2 red peppers, diced
2 green peppers, diced
2 jalapeņos, seeded and minced
6 Roma tomatoes, chopped
1 bunch green onions, chopped
1 T. fresh lime zest
1/2 cup chopped fresh cilantro
1 lb. cooked linguini noodles

Directions:
Directions:
In a large Dutch oven, heat olive oil over medium high heat. Add chicken; cook for 10-15 minutes or until lightly browned. Remove chicken and set aside. Add garlic; cook for one minute, stirring constantly. Add chicken broth, lime juice, cumin, chili powder, garlic powder, salt, red and green pepper, and reserved chicken. Bring to a simmer over medium heat. Cook, covered for 25 minutes, stirring occasionally. Add jalapeņos , cook uncovered for 5 minutes. Add tomatoes green onion, cilantro, and lime zest; cook for one minute. Add hot cooked pasta, tossing to combine.
