Cooking spray
Canadian bacon
English muffins, cut in half
Butter, softened

Blender Hollandaise (page 191)

Preheat oven to 350 degrees.

Prepare Blender Hollandaise.

Butter a griddle and cook Canadian bacon on both sides until lightly browned.

Spray a muffin tin with cooking spray and put 1 tablespoon water in each muffin cup. Gently place a cracked egg in each cup. Bake in oven for 13 minutes. Remove eggs with a slotted spoon.

Toast English muffins and lightly butter them.

Place a piece of cooked Canadian bacon on each muffin. Top with a poached egg, Hollandaise sauce, and sprinkle with chives.
