2/3 CUP HERSHEYS COCOA OR HERSHEY'S EUROPEAN STYLE COCOA
1/8 tsp. SALT
1 1/2 CUPS MILK
1/4 CUP (1/2 STICK) BUTTER OR MARGARINE
1 tsp. VANILLA EXTRACT

ADD 1 CUP CHOPPED PECANS (OPTIONAL)

SPREAD BUTTER EVENLY ON A COOKIE SHEET

IN A HEAVY 4 QUART SAUCEPAN, STIR TOGETHER SUGAR, COCOA AND SALT; STIR IN MILK. COOK OVER MEDIUM HEAT, STIRRING CONSTANTLY, UNTIL MIXTURE COMES TO A FULL ROLLING BOIL. BOIL WITHOUT STIRRING, TO 234F OR UNTIL SYRUP, WHEN DROPPED INTO VERY COLD WATER, FORMS A SOFT BALL WHICH FLATTENS WHEN REMOVED FROM WATER. (BULB OF CANDY THERMOMETER SHOULD NOT REST ON BOTTOM OF SAUCE PAN.) REMOVE FROM HEAT. ADD BUTTER AND VANILLA; DO NOT STIR. COOL AR ROOM TEMPERATURE TO 110F (LUKEWARM). BEAT WITH WOODEN SPOON UNTIL DUDGE THICKENS AND LOSES SOME OF IT'S GLOSS. SPREAD QUICKLY ONTO BUTTERED COOKIE SHEET. COOL CUT INTO SQUARES.

I REMEMBER MY MOM MAKING THIS IS A CHILD USUALLY AT CHRISTMAS TIME OR FOR A SPECIAL OCCASION. I ALWAYS LOVED TO WATCH AND LEARN SO I COULD DO THE SAME. THIS IS THE ORGINAL FUDGE RECIPE FROM HERSHEYS COCOA! I REMEMBER MY DAUGHTER-IN-LAW BRITTANY ASKING ME TO TEACH HER HOW TO MAKE IT. AS WE WERE PREPARING THE FUDGE WAITING ON IT TO GET TO THE ROLLING BOIL, WE WERE CHATTING TRYING TO KEEP THE BABIES OUT OF HARMS WAY I OVERCOOKED THE FUDGE WHICH WAS NOW SCROCHED! NEEDLESS TO SAY WE HAD TO TRASH THAT BARCH AND START OVER. NOTE TO SELF THIS IS A RECIPE THAT NEEDS YOUR UNDIVIDED ATTENTION ! THIS FUDGE IS AO RICH 1 SQUARE IS ALL YOU NEED! HOWEVER ITS SO DELISH ITS HARD TO STOP AT JUST ONE!
