1 med. onion, chopped
3 or 4 stalks celery, diced
1 lb. ground beef
1 small can red beans
2 or 3 potatoes, cut into large cubes
1 c. tomato juice

Directions:
Directions:
Saute the onions and celery in margarine. Add the ground beef to the pan and brown. Drain off the fat. Add the remaining ingredients and season to taste. Cook until the potatoes are done -- about 20 - 25 minutes.

This meal was a staple of our family's camping recipes. My sister and I used it for one of ourr 4-H demonstrations. It is a quick and easy meal to make.
