4 c. all-purpose flour
1 tsp. salt
1 Tbsp. baking powder
6 eggs, slightly beaten
1 Tbsp. vanilla
1 tsp. cinnamon
dash nutmeg
cider or milk
6 c. Golden Delicious apples, coarsely chopped

Directions:
Directions:
Mix all dry ingredients thoroughly. Make a well. In well, add eggs, vanilla and enough liquid to make the consistency of muffin batter. Do NOT over-beat. Fold in apples. Drop by tablespoonfuls into hot oil (375º F). When fritter rises to top of oil, turn with tongs and brown on opposite side. When both sides are dark golden brown, drain on paper towel and sprinkle with either powdered sugar or a mixture of cinnamon and granulated sugar.
Yield: about 2 dozen medium sized fritters
