"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Apple Pie muffins, by Kari Hamilton, is from Tasty and Easy Paleo Recipes,

families or individuals create heirloom cookbook treasures.
1/2 c coconut flour 1/2 tsp salt 1/2 tsp baking soda 1/2 tsp baking powder 5 eggs 2 egg whites 1 large mashed bananas 1/2 c almond butter 1 tsp vanilla 1.5 tsp cinnamon 3 tbsp honey 1 Apple, roughly chopped
Preheat oven to 350ºF. Mix all ingredients together except the Apple. Beat on high for 3 min of until fluffy. Fold in apples. Spoon into muffin tins. Bake for 20 min. Might be gooey but that is what you want due to the apple. Cool muffins. Will create 12 muffins.
