For the orange glaze:

2 c orange juice
1/2 c coconut aminos
1 tbsp heaping honey
1/4 tsp fish sauce
Zest of 1/2 orange ( approximately 1/2 tbsp)

For the kebobs:

1.5 lbs boneless skinless chicken thighs, cut into 1" cubes
1 red pepper, cut into 1" cubes
1 yellow pepper, cut into 1" cubes
1 tsp sea salt
1 tsp garlic powder
1 tsp onion powder
Sliced green onions for garnish
1/2 c sliced almonds
2 tsp sesame seeds

In a large saucepan over medium heat add all the ingredients for the orange glaze sauce. Whisk to combine. Let reduce for 20-25 min. It will reduce by 1/3 and should coat the back of the spoon. That's how you know te sauce is ready if it still looks funny, cook for a little longer. When the sauce is done cooking, remove from the heat and set aside.

While the sauce is cooking, toast almonds and sesame seeds in pan over medium heat. Heat and toss for 10 min until toasted.

Make kabobs mixing the pepper and meat until all is used up. Then sprinkle the kabobs with salt, garlic and onion powder on all sides. Turn the grill to medium heat and grease with ghee. Once grill is hot, cook for 4-5 min on all 4 sides or until the chicken is no longer pink in the middle. Once kabobs are off the grill brush with the glaze sauce. Garnish with green onions, almonds and sesame seeds.
