1 c carrots, shredded
3 eggs
1/2 c almond meal
1/2 c full fat coconut milk
1/4 c walnuts, chopped
2 tbsp coconut oil
2 tbsp coconut flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Lots of : cinnamon, ginger and nutmeg
Handful of raisins (opt)

Directions:
Directions:
Mix all dry ingredients together in a large bowl: almond flour, coconut flour, baking soda, powder and spices together. Add all wet ingredients together: carrots, eggs, coconut milk, coconut oil and raisins. Add wet ingredients to dry ingredients. Mix thoroughly. Heat a large pan under medium high heat and add coconut oil. Pour batter into small pancakes. Cook both sides for 3 min or so.
