3 Tbsp. olive oil
1 Tbsp. minced onion
1 clove crushed garlic
1 tsp. dried thyme
1/2 tsp. dried rosemary, crushed
1/4 tsp. ground sage
1/4 tsp. dried marjoram
1/2 tsp. salt
1/2 tsp. ground black pepper
1/8 tsp. hot pepper sauce
4 bone-in chicken breast halves, with skin (can also use boneless)
1 1/2 Tbsp chopped fresh parsley

1. Preheat oven to 425
2. In a bowl, prepare the basting sauce by combining olive oil, onion, garlic, thyme, rosemary, sage, marjoram, salt, pepper, an hot pepper sauce.
3. Turn chicken breasts in sauce to coat thoroughly. Place skin side up in a shallow baking dish. Cover.
4. Roast at 425, basting occasionally with pan drippings, for about 35 to 45 minutes (20-30 minutes for boneless breasts -- careful not to let them dry out). Remove to warm platter, spoon pan juices over, and sprinkle with fresh parsley.
