1 lb. ground beef
1/2 c. sliced green onions
1 chopped carrot
1 medium clove garlic, minced
2/3 c. water chestnuts
1/2 . chopped red bell pepper
2 T. hoisin sauce
1 T. soy sauce
2 T. chopped fresh cilantro
1 head of lettuce, outer leaves discarded

Directions:
Directions:
Brown ground beef in medium skillet over medium-high heat.
Drain.
Add onions and garlic; cook and stir until tender.
Stir in water chestnuts, carrot, bell pepper, hoisin and soy sauce.
Cook, stirring occasionally until the bell pepper is crisp-tender and most of the liquid has evaporated.
Remove from heat. Stir in cilantro.
Spoon ground beef mixture onto lettuce leaves; sprinkle with additional hoisin sauce if desired.
Wrap lettuce leaf around ground beef mixture to make appetizer bundle.
