1 cup sugar
2/3 cup canola or vegetable oil
2 eggs
1 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
I tsp cinnamon
1/2 tsp salt
1 tsp vanilla
1cup grated carrots
1 cup crushed pineapple

Directions:
Directions:
Combine sugar, oil and eggs. In a separate bowl mix together flour, baking powder, baking soda, cinnamon and salt. Mix into first mixture. Add vanilla, carrots and pineapple. Beat well
Pour into 12 greased muffin tins and bake at 350 for 15 to 20 minutes
