400gm pork fillet
1 medium onion finely chopped
1 tbsp. butter
1 tbsp. flour
1/2 cup stock
1 tsp dried thyme
2 tbsp. mustard
1/3 cup cream
1/4 cup brandy or marsala
Salt & pepper

Directions:
Directions:
Slice the pork fillet into 1cm slices. Using half the butter, fry the pork for about 1 minute, do not overcook. Put to one side. In another pan heat remaining butter adding the chopped onion and gently fry until soft. Stir in the flour then add stock and give a good stirring until a smooth paste is achieved, allow to thicken slightly. Now add the thyme, mustard, salt and pepper to taste. Continue cooking for a further 3 minutes before adding the cream and the liquor. Return the pork to the heat, then serve pouring the sauce over.
