4 bell peppers (mix of whatever color you prefer - I usually use three green and 1 red)
I large onion
2 cloves of garlic
4C seasoned bread crumbs
approx. 1/4 cup of Wesson oil (may not be necessary to use all of it)
grated cheese
salt
pepper

Directions:
Directions:
slice onion, add to pan and begin to caramelize
while onions are browning, slice peppers and mince garlic
once onions begin to brown, add peppers and garlic, salt and pepper
cook, stirring occasionally. Once peppers soften up some, cover pan and cook covered for about 5 minutes. Remove cover, shut heat and begin to add bread crumbs until all liquid is absorbed (add more oil if you want more "stuffing" sprinkle with a good handful of grated cheese and mix together.
