1 Tbsp. Olive Oil
1 Onion, chopped
2-3 stalks Celery, chopped
4 cups Chicken broth
3 Carrots, sliced
2 Potatoes, diced
2 cups Cabbage, shredded
1 Zucchini, diced
1/2 cup Garbanzo Beans
1/2 cup Navy Beans
16 oz. Tomatoes, with liquid
2 tsp. basil
1 tsp. oregano
1/2 cup uncooked rotini
1 Tbsp. Parsley
Parmesan Cheese, garnish

Directions:
In a large stockpot over medium heat, saute the onion and celery. Add chicken broth, carrot and potatoes. Cover and cook over medium heat for 20 minutes. Add remaining ingredients and cook for an additional 15-20 minutes until the past is cooked through. Garnish with grated cheese.
