Hashbrowns (frozen pakg) Optional
1 lb breakfast sausage
10-12 eggs (based on casserole dish)
1 1/2 cups milk
1 pkg 8 oz.of grated cheese (any type)
1/2 onion chopped (Optional)
jalapenos or green chilies (chopped, small can) (Optional)
1 cup chopped mushrooms or to taste (Optional)
salt and pepper (to taste)
Spray oil for coating the dish

Preheat oven to 425*
Spray large casserole dish bottom and sides
In separate bowl, mix eggs, milk, mushrooms, jalapenos/green chilies, salt/pepper
In Casserole dish-Layer:
Press hash browns on bottom (I usually leave this layer out for a healthier version)
sprinkle sausage, then cheese evenly
pour egg/milk mixture evenly as top layer
Bake at 425* for 20 min., reduce heat to 350* and bake for an additional 45 min or until top layer is evenly light brown. Stick a clean knife down the center to test for doneness.

I have served this at many campus gatherings and it's a hit. It's rare that gatherings have a healthy, hearty breakfast option. This casserole can be made in advance.
