Pie crust (baked) or graham cracker pie crust

4 lg. egg yolks, slightly beaten
1 ½ c. sugar
⅓ c. cornstarch
½ tsp. salt
3 c. milk
2 tsp. vanilla
1 c. sweetened whipped cream

Directions:
Directions:
Beat egg yolks with a fork in a small bowl and set aside.

Mix sugar and salt in 2-quart saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir one minute.

Immediately stir at least half of hot mixture into egg yolks. Stir hot mixture back into saucepan. Boil and stir one minute then remove from heat. Stir in vanilla.

Pour into prepared pie shell. Press plastic wrap over filling. Refrigerate two hours or until set.

Remove plastic wrap and top pie with sweetened whipped cream. Immediately refrigerate any remaining pie.
