Sauce
2 1/4 C chicken or vegetable stock
1/4 C unsweetened cocunt milk
2 Tbsp soy sauce
2 Tbsp fresh lime juice
1 Tbsp curry powder
1/2 tsp Chinese chili sauce
1/2 tsp salt
1/2 tsp grated lime peel
other:
1 1/2 C long grain white rice
1/2 C dark raisins
1 Tbsp minced fresh ginger
3 Tbsp butter
1/3 C slivered almonds
1/3 C minced red pepper
1/2 C minced green onion
1 diced fresh pineapple (you could use canned)

Directions:
Directions:
Combine the Sauce ingredients and set aside.
Melt butter in 3 qrt saucepan over medium high heat.
Add ginger and saute until the butter sizzles.
Add Rice and stir to coat.
Add raisins and sauce; bring to a low boil, constantly stirring.
Then cover, reduce heat to lowest setting and simmer until all the liquid is absorbed (18-24 minutes)
Remove from heat and stir in the almonds, pepper, onions and pineapple and serve.
