SMOKED TURKEY AND TORTILLA PINWHEELS - A Mexi Flare - Ole

1/2 c. Yougurt Cheese ( see note)
1/2 c. fat-free ricotta cheese
4 large whole-wheat flour tortillas
8 romaine lettuce leaves
16 (1-ounce) slices cooked smoked turkey breast
1 c. chopped tomatoes
1/4 c. sliced green onions

In a small bowl, stir together the yougurt cheese and ricotta. Spread one-fourth the cheese mixture on each of the tortillas. On each tortilla, layer 2 lettuce leaves, 4 turkey slices, 1/4 c. of tomatoes and 1 tbs of the green onions.

Roll up each of the tortillas, jelly-roll fashion. Insert 6 toothpicks, about 1" apart, into each tortilla roll. Cut between the toothpicks and serve.

YOUGURT CHEESE:
2 (16 ounce) containers fat-free plain yougurt (made without gelatin)

Line a strainer with a double layer of cheesecloth or a coffee filter. Place the strainer over a deep bowl to allow the whey from the yogurt to drip into it.

Spoon the yogurt into the strainer. Place the strainer with the bowl in the refrigerator and let the yogurt drain for 14 to 24 hours or until thickened. Discard the whey and transfer the yogurt cheese to a container. Cover and store in the refrigerator.


Serve as a Mexi- Southwestern - themed dinner

Serve as an entrée with other mexi-type Turkey fixins to accompany appies and have a southwestern flare with Carolina chili dogs; calico chili;Can-do-Corn on the Cob; Carolina Chili; Turkey Meatballs; Turkey Kebobs; Turkey Brie Burgers; Chili - Paprika Roasted Turkey with stuffing; Jalapeno Jelly and Brie cheese; Corn Chips and salsa; Cornbread.
