3 to 4 pound pork loin or roast
2 TBSP dried oregano
2 TBSP dried basil
salt and pepper to taste
2 TBSP minced garlic
1/2 cup honey
2 TBSP olive oil
1/4 cup low-sodium soy sauce
2/3 cup Parmesan cheese, grated

Directions:
Directions:
Place the pork in the slow cooker.
In a medium bowl, combine the other ingredients to make a sauce and pour over the roast.
Cover and cook on low for 6--8 hours.
Remove the cooked pork from the slow cooker, reserving the liquid. Shred the meat.
Add the reserved cooking liquid to a saucepan and bring to a boil. Reduce the heat and simmer until reduced and thickened a bit.
Bur the liquid over the shredded meat and serve.

I didn't have Parmesan Cheese, so I used the grated parmesan in the green can, and it turned out great. Serve the leftovers on buns for sandwiches the next day.
