Ingredients:  
2 medium eggplant
Butter
2 eggs
Salt & pepper
4 stalks celery
2 c cracker crumbs
cheese

Directions:
Directions:
Peel and boil eggplant. Saute' onion and celery in butter. Drain water off eggplant when it is done. Add all ingredients. Sprinkle cheese in mix. Bake 350º for 20 minutes. Sprinkle cheese on top and bake 8 more minutes.
