6 large potatoes, washed and peeled
1/2 cup butter
2 cups grated sharp cheddar cheese
2 cups sour cream
1/3 cup green onion, chopped
1 teaspoon salt
1/8 teaspoon black pepper

Directions:
Directions:
Cut potatoes in half, place in a 2 quart saucepan and cover with water.
Cook over medium high heat until fork tender. Drain.
Set potatoes in freezer for a half hour.
Remove potatoes from freezer and grate them. Set aside.
Combine butter and cheese in a sauce pan. Cook over a low heat until almost melted.
Remove from heat and blend in sour cream, onions. salt and pepper.
Pour sauce over potatoes in a 2 quart casserole. Mix gently so potatoes are not mashed.
Bake at 350° for 45 minutes.
