2 large eggplants
Butter
2 eggs
4 stalks celery
1 package cracker crumbs
Cheddar cheese
Salt & pepper
Minced garlic
Onions

Directions:
Directions:
Peel and boil eggplant until tender. Saute' onion, celery and minced garlic. Drain eggplant and add all ingredients except cheese. Add 1 cup of cheese. Bake 350 for 20 minutes. Remove and cover with cheese and bake 8 minutes.
