3-4 Large, skinless, boneless chicken breast halves
1 Small onion finely chopped
1 Small bell pepper, seeded and finely chopped
3 Celery stalks, finely chopped
1 Bag of candied walnuts, coarsely chopped
1/2 Cup dried cranberries, coarsely chopped
1 - 1 1/2 Cups of mayonnaise
1/4 Cup granulated sugar
2 Tablespoons apple cider vinegar
Salt, pepper, cayenne to taste
Red pepper jelly (optional)

Directions:
Directions:
Place chicken breasts in a large pot and cover with salted water.
Bring to a boil over medium/high heat.
Cook until the chicken is no longer pink in the thickest part of the breast. Time varies.
Remove from liquid and cool completely.
(Note - you can freeze the liquid for use when a recipe calls for chicken broth.

Place cooled chicken in a food processor and chop to a smooth consistency. If you prefer chunky chicken salad, pulse until desired consistency is achieved.

Place chopped chicken in a large bowl. Add onion, bell pepper, and celery and mix into the chicken. Gently stir in 1 cup of the mayonnaise, the sugar,and apple cider vinegar. If it appears dry, add the remaining mayonnaise. Add the walnuts, cranberries, and golden raisins. Season to taste, cover and refrigerate until chilled.

Serve on lettuce leaves, mini croissants, or in a decorative bowl. Top with a teaspoon of red pepper jelly (optional)
