1 1/2 cups sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
3 eggs
1/2 cup shortening
1 teaspoon vanilla

Directions:
Heat oven to 350°. Grease and flour 2 round pans, 9x1 1/2 inches, or 3 round pans, 8x1 1/2 inches, or 1 pan 13x9x2 inches.

Beat all ingredients in large bowl on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour into pans.

Bake 9-inch layers 30 to 35 minutes, 8-inch layers 20 to 25 minutes, rectangular 40 to 45 minutes, or until wooden pick inserted in center comes out clean or until cake springs back when touched lightly in center. Cool layers 10 minutes; remove from pans. Cool completely. If using self-rising flour, omit baking powder and salt.

Cupcakes: Line 36 medium muffin cups, 2 1/2x1 1/4 inches. Fill each cup 1/2 full. Bake 20 minutes.
