Slow Cooker Chicken Noodle Soup Recipe

1 1/2 lbs. boneless chicken
5 carrots peeled and chopped
1 1/2 c onion
4 stalks celery
3-5 cloves garlic minced
3 T olive oil
6 c low sodium chicken broth
1 c water
3/4 t dried thyme
1/2 t dried rosemary crushed
1/2 t dried sage
1/4 t celery seed crushed
2 bay leaves
salt & pepper
2 c uncooked egg noodles
1/4 c fresh parsley
1 T lemon juice

In a slow cooker add chicken, carrots, onion, celery and garlic. Drizzle olive oil over the top then add in chicken broth, water, thyme, rosemary celery seed, bay leaves, salt and pepper. Cook on low 6-7 hours.

Remove chicken, cool & dice. Add egg noodles and parsley. Increase heat to high and cook 10 minutes or until noodles are done. Stir in lemon juice and diced chicken.
