2 C. plus 1 T Flour
2 C. Granulated Sugar
1 t. Baking Soda
2 t Baking Powder
1 t Salt
2 t. Cinnamon
1 C Veg. Oil
4 Eggs
2 t Vanilla
2 C. Grated Carrots
1 C Chopped Pecans
1 C. Drained/Crushed Pineapple

Directions:
Directions:
Sift and mix together the first six ingredients. Add oil, beat for 2 minutes. Add eggs & vanilla. Beat 2 more minutes; stir in pineapple, nuts & carrots. Pour into prepared pan. Bake 325 for 45-50 mins.
