Dressing
1 C sugar
½ C salad oil
¾ C apple cider vinegar

Bring to a boil on stovetop until sugar dissolves. Cool.

Ingredients
1 can pinto beans
1 can shoepeg corn
1 jar minced pimentos (small) chopped
3 celery stalks finely chopped
1 small onion (finely chopped)
Cilantro (medium bunch) chopped

After the dressing has cooled. Mix with the rest of ingredients in tupperware or other non-metal bowl. Let sit overnight.

Before serving, drain dressing. Serve with chips, pita or use as condiments for other dishes.

Makes enough for 6 servings.
