3-3 1/2 lb pork roast with bone or western ribs with bone
2 bags sauerkraut or 2 large cans
salt and pepper
can use some chopped onion

Directions:
Secret is to have bone in the meat. More flavor. Some fat on meat is OK.

Brush pork roast with olive oil and salt and pepper
Brown on the stove all sides, very brown (can brown onion with it)

Put sauerkraut in bottom of crock pot. I don't drain or rinse. Use Brown sugar to sweeten sauerkraut. Jack uses small amount. I use almost a whole bag until sauerkraut is now brown like brown sugar.

Put browned pork roast on top sauerkraut and push it into sauerkraut.
Add small amount of water to pan used to brown pork on stove an stir mixings all brownings off bottom and side of pan. Pour pan liquid over pork in crock pot.

Cook on low for 7-8 hours. Check to see if done and not drying out.

Take roast out of crock pot and remove meat from bone. Either put meat back in crockpot or serve the two separately.

Some people add caraway seeds and apples
