2 1/2 sticks margarine or butter softened
3/4 c firmly packed brown sugar
1/2 c granulated sugar
1 egg
1 tsp vanilla
1 1/2 c all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt (optional)
1/4 tsp ground nutmeg
3 c Quaker Oats (quick or old fashioned, uncooked)

Directions:

Heat oven 375º

In large bowl beat butter and sugars until creamy
Add eggs and vanilla, beat well
In another bowl combine flour, baking soda, cinnamon, salt and nutmeg, mix
Add to creamy mixture, mix well
Add oats and mix well

Drop dough by rounded tablespoonfuls onto ungreased cookie sheets
Bake 8-9 minutes for chewy, or 10-11 for crisp
Cool 1 minute on cookie sheet, cool on wire rack
Store tightly covered

Can add 1 c raisins or chopped nuts
Or omit spices, stir in 1 c chocolate chips, butterscotch chips or peanut butter chips
Can be baked as bar cookies. 9x13 ungreased pan, 25-30 minutes
